Biscuits:
2 cups almonds whole natural
1/2 cup granulated sugar
1 teaspoon vanilla essence
5 egg whites
30 dried cherries whole
gloss to the sage:
1 cup powdered sugar
6 tablespoon thick cream
1/8 cup chopped sage
Step 1: Preheat the oven to 325 ?F (160 OC) and prepare a cooking plate slightly greased and covered with a sheet of parchment paper. Step 2: Using a mixer or a food processor, grind the almonds and sugar together. The mixture should resemble a thick flour. Step 3: With an electric mixer, whisk the egg whites and vanilla essence until the egg whites are closed. Using a spatula rubber, delicately add the mixture of almonds and sugar in the egg whites until homogeneity. Transfer the mixture into a pocket to pastry with a large tip. Step 4: On the baking sheet, form of biscuits round1 inch leaving about 3/4 inch between the biscuits. Remove an entire cherry dried on top of each of the cookies before baking. Place in the center of the oven and bake for 10 to 12 minutes until the biscuits are golden brown. Remove from the oven and remove on a grid to cool. Step 5: For the icing, whisk all the ingredients until the mixture a smooth and homogeneous. When the cookies are cooled, extend the icing on top and then sprinkle with sage.
