Andie's Buttermilk Pancakes

One of my best friends in the world introduced me to this awesome pancake recipe it is super easy to make and makes drool worthy pancakes!!! It is easy to double than freeze left overs so my kiddos have homemade pancakes on request during the week on busier school mornings.

2 Cups Flour
1 1/2 tsp baking powder
1 tsp Soda
dash of salt

2 Cups Buttermilk
3 eggs
1tsp Vanilla
4 T Melted Butter
Mix dry and wet ingredients separately in two bowls. Gently whisk wet ingredients into dry ingredients and make pancakes on hot griddle. When one side of your pancake is almost cooked, add sliced banana's or blueberries to the bubbling doughy side and then flip! Serve with buttermilk syrup. For waffles: add a tablespoon or two of canola oil to batter and a bit of skim milk to thin the batter a little. Use in a Belgian Waffle Iron. So good with fresh strawberries and buttermilk syrup!

Family friendly Tuna Noodle Casserole made with a simple cheddar cheese sauce and crunchy buttery Parmesan panko breadcrumbs,

Tuna Casserole:
8 ounces wide egg noodles
5 tablespoons butter (unsalted)
5 tablespoons flour
2 1/2 cups milk (2%)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 teaspoon dried parsley
1 cup shredded sharp cheddar
1 cup shredded white cheddar
2 pouches tuna in water
1 cup frozen baby peas
Crumb Topping:
1/2 cup panko breadcrumbs
2 tablespoons butter melted
2 tablespoons grated Parmesan
1/2 teaspoon dried parsley

200 g Kimchi
200 g Pork belly ( thin sliced )
1 tbsp Korean chilli powder
1 tsp Sesame oil
1/2 Onion
1 tbsp Sesame oil
1 tbsp Soy sauce
1 tbsp Sake ( Dry white wine )
