Apple Onion Soup I know it might sound like a different combination – but it is a delightful combo that you should try. I add cauliflower to my soup because I like to bump up the nutritional value of this soup – it’s a great way to get your veggies in! If you really don’t like cauliflower it’s ok if you don’t add it. I think it adds to the soup, but plain apple onion soup is delicious as well – I’ve done both!
3 large apples: peeled, cored and chopped
1 large sweet onion diced
1 20 ounce bag of frozen cauliflower
1 32 ounce chicken (or veggie) broth
2 C water
1 tsp Rosemary
1 tsp Salt

Place all ingredients into large pot and bring to a boil
