Apple and peanut butter pair perfectly into a soft and chewy blondie!

½ cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup apples, peeled & diced small (this was 2 Gala apples for me)
1 cup flour
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
