Apple Pie Healthy Pancakes
2 medium/large sweet apples
2/3 cup flour
2/3 cup Skyr (or Greek yogurt)
1/3 - 1/2 cup milk
1.5 teaspoon baking powder
2 eggs
1.5 teaspoon cinnamon
6 tablespoons flaked almonds
Olive oil for frying (use 1 tablespoon per batch)
