Apple Pie Pancakes

These fluffy, cinnamon infused pancakes studded with tender pieces of apple are the perfect start to a great day. The tart apples are wonderful complement to some good maple syrup, and the whole apple pie filling whips up in the microwave while you make the rest of the pancakes, so it is super simple!

2 large eggs, yolks and whites separated
1 1/4 cups milk (buttermilk, soy milk, almond milk, regular milk)
3 tablespoons melted butter or vegetable oil (I use vegetable oil, little healthier)
1 1/2 cups All-Purpose Flour (approximately 6.4 ounces)
3/4 teaspoon salt
2 heaping teaspoons baking powder
1/4 cup malted milk powder (or 3 tablespoons granulated sugar total)
1 tablespoon brown sugar, packed
1/2 teaspoon vanilla
1/2 teaspoon lemon juice (optional, but good to use if not using buttermilk)

1 medium-large granny smith apple, peeled, cored, and diced into 1/4? pieces
2 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar
