A spicy sweet salsa filled with apples, tomatoes, peppers, onions and spices.

3 lbs tomatoes, peeled then chopped
2 1/2 cup white onions, chopped
2 cups green pepper, chopped
2 jalapenos, seeded and finely chopped (reserve some seeds to add)
5 -6 Honey Crisp apples, peeled, cored and chopped
1/2 cup white sugar
1/2 cup brown sugar
1 cup apple cider vinegar
1 1/2 tsp salt
1 1/2 tsp pickling spices (tied up in a coffee filter)
2-3 tsp cinnamon
Citric Acid**
2 1/2 cup white onions, chopped

Add all ingredients to large pot and bring to boil.
Reduce heat to a simmer.
Cook stirring often for 2 hours or until thick.
