Apple Strudel Muffins

Light and tasty apple strudel muffin. I used cake flour because I wanted to use it up, and it made the muffin light, like a cake.

2 cups All-purpose flour (or cake flour)
1 teaspoon Baking Powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1/2 cup butter
1 cup Sugar
2 Eggs
1 1/4 teaspoons Vanilla
1 1/2 cups apples; chopped

1/3 cup Brown sugar; packed
1 tablespoon all-purpose flour
1/8 teaspoon Ground cinnamon
1 tablespoon Butter
