This delicious sweet Apricot- Pineapple Salsa is a perfect addition to COCONUT SHRIMP. I love the sweetness of the apricots and pineapples along with the heat of the jalapeno. The perfect combo!

1 cup diced pineapple
2 tablespoons red onion, finely chopped
1/2 cup apricot preserves
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 medium jalapeno pepper, seeded and chopped
1/2 teaspoon salt
1/4 teaspoon pepper

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
