This arugula salad is made with white beans, tomatoes, red onion, shaved parmesan cheese and pine nuts, all tossed in a lemon dressing. A bright and vibrant salad that makes the perfect side dish or lighter main course.

4 cups arugula
1 cup cherry tomatoes ( halved )
1 cup cannellini beans ( rinsed and drained )
1/4 cup red onion ( thinly sliced )
1/2 cup parmesan cheese ( shaved )
2 tbsp pine nuts ( toasted )
1 tbsp chopped parsley
For the dressing:
4 tbsp olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
salt and pepper to taste
