Bursting with springtime flavors, this Asparagus and Spinach Frittata is the perfect dish to wake up to in the morning. Fresh asparagus, spinach and tangy goat cheese pair nicely to give you a healthy balanced breakfast, snack or meal any time.

1 tablespoon unsalted butter
1 vidalia onion, diced
1/3 cup crushed potato chips, I used regular
2 tablespoons panko bread crumbs
6 eggs
1- 10oz box frozen spinach, thawed
1 cup asparagus, blanched and chopped*
1/4 cup fresh basil, chopped
2 tablespoons fresh dill, chopped
4 ounces goat cheese, softened
2/3 cup Parmesan cheese, divided
salt and pepper
