Asparagus Risotto
This is one of my very favorite side dishes! The flavor is amazing!

1 tsp. salt
1 – 1 1/2 lb. asparaÂgus, trimmed and cut into bite-sized pieces
4 tablespoons butter
3 –4 shalÂlots, minced
1 cup uncooked ArboÂrio rice
1 tablespoon fresh lemon juice
1 tablespoon garÂlic, minced
4 ½ — 5 cups chicken broth
1/3 cup grated fresh parmeÂsan cheese
1 teaspoon balÂsamic vinegar
1/2 tsp. MonÂtreal steak seasoning
2 tablespoons olive oil
1 onion, diced
8 oz. mushÂrooms chopped
1 tsp. sugar

PreÂpare asparaÂgus by allowÂing it to break at it’s natÂural point at the end; disÂpose of the botÂtom porÂtion which will be tough and fibrous. Cut or break into bite-sized pieces.
