How about this Autumn Kale Salad, huh! Well, in one word. Amazing! The kale has a bite to it, the radishes give it a little spicy taste, then mixed with the creamy goat cheese, toasted pecans, and sweet craisins and yum! This is the perfect kale recipe to get you into Kale, at least it was for me! It is also a great dish to have in your back pocket if you are looking for that perfect holiday side dish! The colors just scream holiday! :)

1 bushel of kale, prepped and torn into bite size pieces
1 granny smith apple, diced
1/2 cup of craisins
4 oz. of crumbled goat cheese
1 1/2 cups of pecans, roasted
4 radishes, thinly sliced
Dressing:
1 Tablespoon of stone ground mustard
1 Tablespoon of honey
3 Tablespoons of plain white vinegar
4 Tablespoons of Olive Oil
salt & pepper
