1 tablespoon olive oil
½ pound thick cut bacon ( diced )
2 cups onion ( diced )
1 (½ tablespoons) fresh garlic ( minced )
3-4 pound pork butt ( cut into two-inch cubes )
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cups white wine
½ pound carrots
2 Gala apples ( cored, skins left on and cut up into chunks or any hard apple but not Granny Smith. See note )
2 cups any jarred apple sauce ( sweetened or unsweetened )
2 14.5-ounce cans chicken stock ( divided )
3 bay leaves
1 pound new red potatoes ( peeled and cut into bite-sized pieces )
1 pound peeled butternut squash ( cut into bite-sized pieces )
