Bacon-Infused Bourbon Double Chocolate Pecan Cookies

Oh, who doesn’t love a rich, nutty, boozy cookie? Even if you don’t love Bourbon (I shudder to think about the last sip I took), these cookies will bring subtle salty, smokey tones, that will leave your guests wondering what magical ingredients you added to make them have such a “good mouth feel,” as one of my friends recently described. Then you can tell them that you added bacon-infused Bourbon to the batter & watch as they oogle & aww & reach for another.

For the Bourbon
1/2 cup Bourbon
2 slices thick-cut smoky bacon

For the cookies
1 1/2 cups pecan halves
3/4 cup unsalted butter
1 1/4 cups dark chocolate chips, divided
3/4 cup demerara sugar
2 large eggs
3 tablespoons bacon-infused Bourbon
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups all-purpose flour
