Baked Chicken Taco


The best tacos you will ever taste! YUM!!!

2-3 Chicken breasts, cubed
2 tbsp taco seasoning
1/2 cup onion, chopped
1/2 cup mushrooms, sliced
2 tbsp olive oil
1/2 cup black bean and corn salsa
1 1/2 cup shredded cheddar cheese
1/2 cup banana peppers, sliced
Soft tortillas

Homemade Refried Beans:
1 8 oz can pinto beans, drained and rinsed
1 clove garlic, minced
2/3 cup chicken broth
3 strips bacon, cut into small pieces
1/4 tsp cumin
Salt and pepper to taste
1tsp cayenne pepper
1/4 cup jalapeños, sliced
1 tbsp olive oil
1/2 cup onion, chopped
Homemade Refried Beans: Cook bacon in skillet with olive oil until crisp. Add onion and garlic and cook until tender. Add remaining ingredients and cook until boils. Lower heat and simmer for 5-10 minutes. Use fork to mash beans. Set aside. Tortillas: Place tortillas in microwave for 1 minute until slightly steamed. Lightly butter both sides of tortilla. Place tortillas directly on oven rack between 2 rungs and shape tortilla to give it a flat bottom. Cook at 350 degrees for 5 minutes or until lightly browned. Set aside in baking pan. Tacos: Place olive oil, onion and mushroom in skillet and sauté until lightly browned. Add chicken and cook until well browned. Add refried beans, banana peppers, salsa and mix well. Spoon mixture into tortillas, top with cheese and cook in oven at 350 degrees for 5-10 minutes or until cheese is melted. Top with sour cream if desired and enjoy!! :)
