Baked Farro with Tomato and Herbs
This hearty vegan casserole is made by baking toasted farro, garlic and shallots in an herb-infused tomato sauce until tender. A crispy walnut breadcrumb topping makes this recipe truly gourmet.
2 cups farro
2 cloves garlic
1/2 cup shallot
1 bay leaf
2 cups vegetable broth
28 oz. diced tomatoes
3 tsp dried herbs
1/2 cup parsley
2 tbsp nutritional yeast
