Baked Italian Chicken and Tomato Basil Eggplant Roll Pasta

This is a warm spicy chicken and tomato dish that's really easy and fun to make.

3/4 lbs. angel hair pasta
1/4 cup basil pesto
2 pieces large eggplants ( cut lengthwise into 8 slices )
4 tablespoons olive oil
salt and pepper to taste
1 lbs lean ground chicken
2 clove(s) garlic ( minced or grated )
1 1/2 cup cherry tomatoes or sub 1 (14 ounce) can san marzano tomatoes
1/4 cup tomato paste
1 cup red wine
1 cup milk
1/4 cup fresh mixed Italian herbs
1 teaspoon crushed red pepper flakes
1/4 cup grated parmesan cheese
8 ounces whole milk ricotta cheese
4 ounces mozzarella cheese ( sliced )
fresh parsley and basil for serving
  1. Bring a large pot of salted water to a boil.
