Creamy and cheesy macaroni and cheese made with real cheese.

10 ounces elbow pasta
4 tablespoons unsalted butter
1/4 cup all purpose flour
2 cups half and half
2 1/4 cups shredded cheddar cheese
3/4 cup shredded Monterey jack cheese
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1/4 teaspoon fresh ground black pepper

Cook the pasta according to the package directions, stopping the cooking process 2 minutes shy of the package directions. Drain the pasta.
