Baked Parmesan Salmon

Made this for dinner tonight, it was so good! I even patted myself on the back after all the rave from the family. I servied it with red beans and rice and corn. Old trick I learned from my Grandma when baking fish. Start it in a cold oven....otherwise, put it in before you turn the oven on.

1 lb salmon fillet
2 tablespoons mayonnaise
1 teaspoon lemon pepper
1 tablespoon parmesan cheese
1 cup dry breadcrumbs
1 whole lemon sliced
Start with cold oven, set to 350f Place salmon skin side down on a glass baking dish. Spread a generous amount of mayonnaise; cover entire top of fish. Sprinkle liberally with lemon pepper, cheese and dry bread crumbs. Bake about 40-45 minutes, uncovered.
