Baked Sun Dried Tomato and Spinach Chicken Parmesan Meatballs

I just love chicken parmesan. It is pretty time consuming to make. Especially if I am making it for a crowd. It also is usually fried which as we all know isn't oh so healthy. For this dish I have transformed it into little popable flavor packed meatballs.

1/4 cup fresh baby spinach, chopped

1/4 cup sun dried tomatoes, chopped

1/4 cup grated onion

1 clove garlic, grated or pressed through a garlic press

1 teaspoon dried basil

1 teaspoon dried parsley

2 tablespoons parmesan cheese

1/2 teaspoon salt

1/2 teaspoon pepper

1 pound ground chicken

1 cup marinara sauce

1 cup shredded Italian blend cheese
To make the meatballs, combine the spinach, tomatoes, garlic, grated onion, basil, parsley, Parmesan, salt, pepper, Stir together with a fork just until blended. Mix in the ground chicken and knead together...
