A healthy, gluten free, vegan version of banana bread with the option of making it a great post-workout snack with added protein!

1 cup GF oat flour
2 tbsp chia seeds
1/2 tbsp flaxmeal
tbsp stevia (optional)
1 tbsp protein powder (optional)
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup diced apricots
1/4 cup honey + 1 tbsp - substitute with agave or maple syrup to make completely vegan
1 banana [mashed]
1.5 - 2 tbsp coconut oil
2 tbsp coconut butter
tbsp unsweetened coconut
2 tsp cinnamon
2 tbsp walnut pieces (optional)
2 tbsp chia seeds
1/2 tbsp flaxmeal
