Delicate to taste, these fluffy muffins are packed with bananas, nuts and zucchini!

1 3/4 cups of flour - I used 1 cup of spelt flour and 3/4 cups of Almond Meal Flour for GF version
1/3 cup sugar - I use honey or Xylitol
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
3/4 cup mashed banana (about 2 small bananas)
1 medium size zucchini, peeled and diced
1/2 cup chopped walnuts
1/4 cup vegetable oil
