Banoffee Pie Cupcakes

A play on the banoffee pie by using a digestive biscuit base, a moist banana cupcake filled with caramel and topped with a spiced frosting.

Base;
1 and 1/2 Cups Digestive Biscuit Crumbs (or Graham Crackers)
50g Butter, melted
Banana Cupcakes;
110g Butter, softened
2/3 Cup Caster Sugar
1/3 Cup Brown Sugar
2 Eggs
1 tsp Vanilla Essence
3 Very Ripe Bananas (around 1 and 1/2 Cups)
1/3 Cup Milk
1 1/2 Cups Flour
½ tsp Baking Soda
3/4 tsp Baking Powder
1 Tsp Cinnamon
1/2 Tsp Mixed Spice
Caramel Filling;
1/2 tin Condensed Milk
20g Butter
2 tbsp Golden Syrup
2 tbsp Brown Sugar
Caramel Spiced Frosting;
2 and 1/2 Cups Icing Sugar
20g Butter, softened
1/4 - 1/2 Tsp Mixed Spice
1/2 - 1 Tsp Cinnamon
2 tbsp Caramel Filling
Preheat oven to 180C and line a 12 piece muffin tray. Mix the melted butter and cookie crumbs together and press some of the mixture into each cupcake case. Place in the fridge while you make the banana...
