Basil Chicken in a Coconut Curry Sauce

This recipe though is a whole family favorite, which a badly stained page in the family cookbook can attest to. This mama doesn’t even like coconut (the only definite exception to that rule being a Girl Scouts samoa cookie) and I love this dish.

3 skinless, boneless chicken breasts
2 tsp curry powder
1 tsp salt
1/2 tsp pepper
1/4 tsp chili powder
1 medium red onion, chopped
5 cloves garlic, minced
2 jalapeno peppers, seeded and minced
1 tbsp olive oil
1 14-oz can coconut milk
1 tbsp cornstarch
1 tbsp dried basil
1/2 tsp ginger powder
3 cups hot cooked rice
2 tsp curry powder
1 tsp salt
1/2 tsp pepper
1/4 tsp chili powder
1 medium red onion, chopped
5 cloves garlic, minced
2 jalapeno peppers, seeded and minced
1 tbsp olive oil
1 14-oz can coconut milk
1 tbsp cornstarch
1 tbsp dried basil
1/2 tsp ginger powder
3 cups hot cooked rice
