Basque Chicken : A Lesser Known Gem Of French Gastronomy.

The Basque Country occupies a large portion of north eastern spain and a little strech of south western France. Poulet Basquaise (Basque Chicken) is a popular dish that originated from the French part of Basque country and is made using the emblematic chili from the region, the piment d'espelette.

550 grams Chicken ( with bones )
1 cup White Wine ( dry and slightly acidic )
1 Onion
2 cloves Garlic
2 Bell Peppers
3 Tomatoes
5 Fresh Laurel Leaves
3 sticks Fresh Rosemary
3 sticks Fresh Thyme
2 teaspoons Piment d espelette ( Chili from Basque region )
1/3 cup Tomato Puree
2 tablespoons Olive Oil
