These Apple BBQ Pulled Chicken Sandwiches are SO delicious- and also easy to make for a crowd (I made them for a group of 25 last weekend!). The Sweet Onion Apple BBQ Sauce is homemade, and a healthier, low-sugar alternative to store bought sauces.

1 tablespoon olive oil
2 pounds chicken breasts ( boneless )
sea salt and pepper ( to taste )
2 cups Sweet Onion Apple BBQ Sauce
8 buns
Apple Slaw:
6 cups cabbage ( finely shredded )
1 carrot ( shredded )
1 apple ( like honey crisp or pink lady, julienned )
1/4 cup lemon juice
1/2 cup apple cider vinegar
1/4 cup olive oil
1 tablespoon honey
1 teaspoon dijon mustard
1/2 teaspoon sea salt
