BBQ Pulled Pork Sandwiches with Pineapple Mango Slaw

Slow cooker pulled pork smothered in your favorite BBQ sauce and topped with a delicious tangy, crunchy pineapple mango slaw.

For the BBQ Pork
2 1/2 pounds pork roast (shoulder or butt)
Salt and pepper
1 Tbsp oil
1-2 tsp liquid smoke
1/2 cup water
BBQ Sauce
8-10 buns, toasted
Slaw
1 bag broccoli slaw
1/2 red bell pepper, finely diced
1 green onions, chopped
1 heaping Tbsp chopped cilantro
1/2 cup diced mango
1/2 cup diced pineapple
Dressing
3 tablespoons mayonnaise
1 Tbsp cider vinegar
1 1/2 Tbsp fresh pineapple juice (just use any reserved from cutting the pineapple)
1 tsp dijon mustard
1 Tbsp sugar
1/4 tsp kosher salt
1/8 tsp black pepper
