Beef Barley Soup

1 tbsp olive oil
2 lbs beef stew meat
1 onion ( finely chopped )
3 large carrots ( cut into 3/4 inch pieces )
3 stalks celery ( sliced )
2 tsp minced garlic
8 cups beef broth
1 dried bay leaf
2 sprigs fresh thyme ( or 1 tsp dried thyme )
3/4 cup pearl barley
1 cup sliced mushrooms
2 tbsp chopped parsley
salt and pepper to taste
  • Heat the olive oil in a large pot over medium high heat. Season the beef stew meat with salt and pepper to taste.
  • Place half of the meat in the pot in a single layer. Cook for 3-5 minutes...
