1 Double 8 Cattle Company Fullblood Wagyu Full Packer Brisket ( approx. 15 lbs )
6 tbsp. Grapeseed Oil ( divided )
1 cup Peach-Mango Preserves
Kosher Salt ( to taste )
Freshly Ground Black Pepper ( to taste )
Braising:
1 Large Yellow Onion ( large diced )
2 Large Carrots ( large diced )
8 Garlic Cloves ( smashed )
4 cups Frozen Peach Slices ( thawed )
3 cups Frozen Mango Slices ( thawed )
3 Jalapenos ( cut into 1/2-inch rings, seeded )
6 cups Beef Stock
1/2 cup Soy Sauce
Sweet and Spicy Rub:
1/2 cup Ancho Chile Powder
1/2 cup Ground Cumin
1/2 cup Ground Coriander
1/3 cup Garlic Powder
1/3 cup Onion Powder
1/2 cup Brown Sugar
