Beef enchilada casserole is an easy family friendly recipe that's perfect any night of the week!

2 lbs ground beef
1 onion ( diced )
1 cup vegetable oil
salt ( to taste )
pepper ( to taste )
2 1/2 tsp chili powder
1 1/2 tsp ground cumin
1 tsp garlic powder
14 corn tortillas
1 (19 oz) can of enchilada sauce
1 (8 oz) bag of shredded cheddar jack cheese
  1. Brown the ground beef in a large pot over medium heat. Once crumbled and brown transfer to a paper towel lined plate to drown.
