Cheesy Grits: 1 cup quick grits 4 cups water 1/4 teaspoon salt 3 tablespoons butter 2 tablespoons cream 1 1/2 cups shredded sharp cheddar Shrimp: 6 slices smoked bacon 1 pound large shrimp, peeled and deveined 2 teaspoons Cajun seasoning 1/8 teaspoon ground cayenne pepper 1 teaspoon dried parsley 1 tablespoon vegetable oil 1 red pepper finely chopped 3 green onions chopped 3 cloves garlic minced 1/4 cup low sodium chicken or vegetable broth
Bring the water to a boil; add the grits and salt. Cook for 5-7 minutes or until tender. Remove from heat, stir in butter, cream and cheddar cheese.
