Beet Salad with Honey Mustard Vinaigrette
This delectable Beet Salad is flavor packed with sweet beets, peppery arugula, carrots, red onions and almonds all drizzled with a light honey mustard vinaigrette.
2 tablespoons cider vinegar
3 tablespoons honey
2 tablespoons Dijon Mustard
1/4 cup olive oil
salt and pepper to taste
3 large red beets
1 tablespoon olive oil
salt and pepper
6 cups arugula and baby spinach
2 carrots peeled and cut matchstick style
1/4 cup thinly sliced red onion
1/2 cup sliced almonds
