2 cups peeled, chopped Granny Smith apples (about 2 apples)
3/4 cup + 2 Tablespoons light brown sugar, divided
1 1/4 teaspoon pumpkin pie spice, divided
1/2 cup granulated sugar
3 large eggs
1 Tablespoon vanilla extract
2 cups all-purpose flour
1 Tablespoon baking powder
1 teaspoon salt
1 cup buttermilk
For the Brown Sugar Cream Cheese Frosting:
1 (8 oz) package cream cheese, room temperature
¼ cup butter, softened
1 cup light brown sugar
2 teaspoon vanilla
