Best Vegetarian Stuffed Pepper Soup

This Vegetarian Stuffed Pepper Soup is very easy. Cook in Instant Pot or Slow Cooker, therefore, you can simply throw the ingredients together. You can notice it has lots of green bell pepper cause that's what I have on hand.

1 cup uncooked rice (I like to use jasmine or basmati)
2 cups diced bell pepper
1 cup onion
1 piece jalapeno ( optional )
1 piece clove garlic
2 teaspoon avocado oil or olive oil
4 cups vegetable broth ( See notes )
14.5 ounce canned fire roasted diced tomatoes
14.5 ounce canned tomato sauce ( See notes )
1 teaspoon salt or to taste ( See notes )
1 teaspoon black pepper
1 teaspoon salt-free Italian blend seasoning
1/2-1/4 teaspoon garlic powder
1/4 teaspoon dried oregano (I like using dried oregano leaves)
1/4 teaspoon red pepper flakes
1 cup dry red lentils
