Bittersweet Chocolate Peppermint Cookies

These cookies are almost Paleo. I mean, they contain so little flour that they could just about pass for something of the caveman era, right? They’re practically healthy (woah- that was a jump!) Let’s start this thing over. These cookies will do wonders for your emotional health (that’s more realistic). 12 ounces bittersweet chocolate, chopped
4 tablespoons (1/2 stick) unsalted butter, cut into pieces
1/3 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon sea salt
2 teaspoons cocoa
2 large eggs
3/4 cup demerara sugar
2 teaspoons vanilla extract
1/2 cup chocolate and mint morsels
