Blue Moon Pasta – a creamy and delicious white sauce with feta and blue cheese, spinach, pine nuts and fresh tomatoes over linguine with tender juicy chicken.

1 box linguine pasta
2 Tbsp olive oil or butter/margarine
2 boneless, skinless chicken breasts cut into 1-inch cubes
¼ tsp salt
¼ tsp pepper
1 tsp minced garlic
3-4 cups fresh spinach
1 cup fresh tomato, diced
½ cup pine nuts
Cream Sauce
4 Tbsp butter or margarine
4 Tbsp all-purpose flour
½ tsp salt
¼ tsp pepper
1 cup milk
¾ cup feta crumbles, divided
¾ cup blue cheese crumbles, divided
