Light, fluffy blueberry muffins with a cream cheese topping

1 cup (2 sticks) melted unsalted butter that has been allowed to cool to room temperature
1 cup granulated sugar
1 egg + 2 egg whites
1 tsp vanilla

2 tsp baking powder
½ teaspoon salt
2 cups blueberries
Cream Cheese Topping
8 oz (1 package) cream cheese, softened
? cup granulated sugar
½ teaspoon vanilla extract
