Blueberry Lemon Smoothie

Sweet and tart flavors pair perfectly with vanilla and coconut aroma in this antioxidant-rich drink. Make it for breakfast or take it to work for lunch. It stores well in the fridge for up to a day but is tastiest when freshly blended.

Ingredients:
2 cups unsweetened coconut milk
1/2 cup frozen blueberries
1/2 tsp. vanilla-extract, sugar free
1 tbsp. lemon juice
  • Combine all ingredients in a food blender.
  • Blend on high until smooth.
  • Serve immediately or store in the fridge.
