For the cakes
2 1/2 cups almond flour
2 tbsp poppy seeds
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/3 cup canola oil
1/3 cup honey
2 large eggs
1 tsp vanilla extract
8 oz. blueberries
For the coconut cream
1 can of full fat coconut milk
zest from one lemon
2 1/2 cups almond flour
2 tbsp poppy seeds
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/3 cup canola oil
1/3 cup honey
2 large eggs
1 tsp vanilla extract
8 oz. blueberries
For the coconut cream
1 can of full fat coconut milk
zest from one lemon
Preheat oven to 350°F. Butter a mini cake pan (or a large muffin pan), and set aside. Combine almond flour, poppy seeds, salt, baking powder and baking soda in a large bowl, and set aside.
