Boxty, or bacstaí, is the quintessentially Irish potato cake. This pancake is made by combining leftover mashed potatoes with shredded raw ones to make these soft and delicious pancakes. Also used as in place of bread for sandwiches.

1 cup mashed potatoes ( left-overs work great )
1 cup raw potato ( shredded )
1/2 cup green onion ( sliced )
1 cup flour
1 egg
1 tablespoon milk
1 teaspoon baking powder
to taste salt and pepper
  1. Toss the flour and baking powder with the shredded raw potatoes and scallion. Mix in the mashed potatoes.
