This boysenberry cheesecake is a rich, creamy and melt-in-the-mouth vanilla cheesecake topped with a homemade boysenberry compote. This is sure to impress anyone you serve it to.

1 Packet Digestive Biscuits (Graham Crackers)
50g Butter, Melted
625g Cream Cheese
1 Cup Greek Yoghurt (or whipping cream)
1/2 Cup Icing Sugar
2 Eggs
2 Tsp Vanilla Essence
For the Boysenberry Compote;
1 Tin of Boysenberries
2 Tbsp Cornflour
2/3 Cup Sugar
