Braised Fullblood Wagyu Beef Chuck Flautas

These delicious flautas, or taquitos, are filled with braised Fullblood Wagyu chuck steak, shredded cheese, onions, poblano peppers, and an array of spices. Dip the flautas in the avocado cream, and top them with salsa fresca! This recipe is perfect for dinner or as an appetizer when hosting friends and family!

4 lbs. Double 8 Cattle Company Fullblood Wagyu Chuck Steak ( cut into 2 inch cubes )
2 tbsp. Grapeseed Oil
1 Sweet Onion ( julienned )
2 Poblano Peppers ( julienned )
2 tbsp. Ground Cumin
2 tbsp. Ground Coriander
2 tbsp. Ancho Chile Powder
6 cups Beef Stock
16 6-Inch Flour Tortillas
1 Egg ( whisked )
16 oz. Shredded Jack Cheese
Grapeseed or Vegetable Oil ( for frying )
Avocado Cream:
1 Large Hass Avocado ( ripe )
1/4 cup Sour Cream
1 tsp. Garlic ( minced )
1/2 tsp. Kosher Salt
1 tbsp. Lime Juice
to taste Kosher Salt
to taste Freshly Ground Black Pepper
Salsa Fresca:
2 Roma Tomatoes ( small diced )
1/2 Red Onion ( small diced )
1 Small Jalapeno ( diced with seeds removed )
1/3 cup Cilantro ( minced )
2 Garlic Cloves ( minced )
1/2 Lime ( juiced )
to taste Kosher Salt
to taste Freshly Ground Black Pepper

FIRST STEP

Pull the Fullblood Wagyu chuck steak from the freezer 24 hours before starting this recipe, and place it in the refrigerator.
