Breakfast Potato Boats

A seasoned baked potato loaded with cheese, Canadian bacon, peppers and baked with an egg on top.

2 russet baking potatoes
2 Tbsp olive oil, divided
salt and pepper, to taste
2 Tbsp butter, room temperature
1 cup shredded cheddar cheese
4 slices Canadian bacon, , chopped
1 bell pepper, chopped (or use mini bell peppers of different colors)
4 eggs
1 avocado, peeled, seeded and sliced
1 green onion, chopped
