Topped with fresh broccoli and a sprinkling of cheddar cheese, these Broccoli Cheddar Stuffed Baked Potatoes make deliciously easy meal!

1 large russet potato, skin scrubbed and dried
1 tablespoon olive oil
Salt and pepper, to taste
Topping:
1/2 cup fresh broccoli florets (see directions below)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup shredded cheddar cheese
