Bruschetta with Mozzarella and Black Olives

A twist on classic bruschetta that incorporates black olives and slices of fresh mozzarella cheese.

6 Roma tomatoes, seeded and diced
8 cloves garlic, minced
6 basil leaves, minced
2 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped black olives
12 slices fresh mozzarella
12 slices baguette bread
Olive Oil
Combine all ingredients through black olives in a bowl. Cover tightly and refrigerate several hours to allow the flavors to combine. When you\\\'re ready to prepare your bruschetta, brush both sides of the baguette slices with olive oil. You can either toast in the oven under the broiler or on a grill/ grill pan, whichever you prefer. When the bread is toasted, top each slice with a slice of fresh mozzarella and a large spoonful of the bruschetta topping.
