4 cups cooked quinoa
3 medium to large sweet potatoes ( peeled and cut into 1/2 inch pieces )
1 tbsp olive oil
salt and pepper to taste
1 15 ounce can chickpeas ( rinsed and drained )
1 cup baby spinach leaves
1 cup shredded purple cabbage
1/4 cup roasted cashews
1 avocado ( peeled, pitted and thinly sliced )
1/4 cup tahini
1 tbsp lemon juice
