3/4 cup onion ( diced )
1 cup carrots ( peeled, halved and sliced )
1/2 cup celery ( sliced )
2 tsp minced garlic
1 red bell pepper ( cut into half inch pieces, seeds and core removed )
1 green bell pepper ( cut into half inch pieces, seeds and core removed )
3 cups cabbage ( coarsely chopped )
15 ounce can diced tomatoes ( do not drain )
1 tsp dried Italian seasoning
salt and pepper to taste
6 cups chicken broth
3/4 cup green beans ( cut into 1/2 inch pieces )
2 tbsp parsley ( chopped )
