A flavorful and easy one skillet dinner.

3 tablespoons canola oil
4 red potatoes, cubed into bite sized pieces
2/3 cup sliced carrots, 1/4 inch slices
14 ounces smoked sausage, cut into 1/2 inch slices
1/2 medium yellow onion, diced
2 teaspoons cajun seasoning
1/2 teaspoon black pepper
1/2 pound fresh green beans
