Four 8-ounce rectangular blocks yellow cheese ( preferably Cheddar )
Four 8-ounce rectangular blocks white cheese ( preferably Monterey Jack )
1 pound goat cheese
2 tablespoons red wine
1 tablespoon paprika
Crackers ( for serving )
